Yes… you are going to see a whole bunch of meat recipes… because it gets a little tiresome living mostly on meat I’m always on the look-out for good and tasty meat recipes and keep trying to mix it up.
My mom found this one from the Dukan Diet Site… Spicy Piri Piri Chicken and sent it to me. I had a Costco pack of chicken legs and thought what the heck… let’s give it a shot. I may be the only one eating them since I’m the only one that likes spicy… but hey… I’m the only one on a restricted diet/cleanse in the house…. 🙂
Piri Piri Chicken
(From The Dukan Diet Site)
- 8 chicken thighs or 4 chicken breast fillets
- 2 teaspoons crushed chilli flakes
- 2 cloves garlic, finely chopped
- 1 teaspoon oregano
- 1 teaspoon paprika
- ¼ cup cider vinegar
- Juice of half a lemon
- Juice of half a lime
- Sea salt and black pepper
Put the chicken legs in a sealable plastic bag and add in the cider vinegar, chilli flakes, lemon juice, paprika, garlic and oregano. Seal the bag and place in the refrigerator overnight or at least for 4 hours.
Remove the chicken from the marinade and season with salt and pepper to taste then BBQ or grill on a medium heat until cooked throughly.
Remove skin for those on Dukan Diet and serve with plain fat free yoghurt with a squeeze of lime juice or you can use one of my new favorite things… True Lime. I found this by accident when I was looking for something to put in my carbonated water that didn’t contain sugar and I was tired of the bitter taste of lemons in my water… and tired of trying to pry lemon wedges out of my water bottle. My daughter had bought these quite a while ago and we had most of a box laying around. So I tried it. It was instant love. No sugar, no carbohydrates and no calories. Unfortunately Canadians or at least Winnipeggers are only able to get the True Lemon or True Lime but online you can also get True Grapefruit or True Orange. The four of these allow you to create a multitude of combinations. I added one of the lime packages in with my yogurt and it had a really nice zing of lime… without the bitterness. Certainly you can add a squirt of lime juice and I’m guessing it would be just as good. It’s just really convenient having these little packages hanging around.
