Chocolate Covered Prunes

As I try to find the energy to wrap presents this sunny and very cold winter afternoon…. I’m trying NOT to make my way through a box of treats that I’ve been hiding for a little bit.  Seriously… I don’t actually drink much… and I really dislike the taste of hot alcohol as in coffee or toddy… but I don’t think there has been a happier marriage than alcohol and chocolate…. no matter what else you add to the mix. Today I share with you… before I eat them all… chocolate covered, almond stuffed, booze soaked prunes!

Yes, I realize that these may sound a little strange to folks.  Some of you are thinking… YUK!!! REALLY???  Dried prunes may make you think of all kinds of things, none of which I’m sure are very festive, but believe me when I say these are so yummy…. so addictive… you’ll add these to your christmas cookie list!  After you have one I dare you to keep your hands away from the rest.

Just think about it….. sweet chewy prunes… soaked in alcohol…. stuffed with a crunchy… healthy… 😉 almond and all of this covered in chocolate…. is … there… anything… better???  They’re almost healthy…. even chocolate is healthy… in small doses…. okay so the booze not so much… but what’s a little nip at Christmas?   LOL

These are so easy that if you’re quick you could still make these before the guests come over!

Instructions:

First soak the pitted prunes in liquor and let them soak it up for at least a day.  Then take them out and allow them to dry*.  Stuff each prune with an almond and set aside. Melt chocolate in a double boiler and dip each prune until coated.  Set on parchment paper until the chocolate hardens then place in festive candy cups. Store in the fridge until ready to serve.

*You want the prunes dry before attempting to coat in chocolate since the chocolate won’t stick very well if they are wet.  I let mine dry overnight on paper towels.
