Swiss Chard Chorizo Cups

I received a big plastic bag full of garden fresh swiss chard the other day from my co-worker and had no idea what to do with it.  I cruised the net and found some interesting breakfast cups, and with a couple of hot chorizo sausages in the freezer I had an idea.

I didn’t really have a recipe just an idea.  I pan fried an onion and some (okay lots) of garlic and added the chorizo sausage.  Once it cooked for a bit then I added a huge bunch of the swiss chard and mushrooms I had left over, once the swiss chard reduced set it aside to cool .

I grated a couple of potatoes in a separate bowl, added some salt and pepper and a tablespoon of flour then lined muffin tins with the potatoes and pressed up the sides of the tins by now the swiss chard mixture had cooled so I added a couple of eggs to it and then put it in the potato cups and topped with a bit of cheese.

I baked at 350 for about 25 minutes on the bottom rack of the oven, but the bottoms didn’t crisp up the way I wanted it to, so I would suggest baking on 400 for about 20 minutes.  Only keep an eye on them… 😉

We’re going to eat these for breakfast, it makes a nice fast and easy meal first thing in the morning if they’re made ahead!
