Peppermint Valentine Kisses


Happy Valentine’s Day… Master… 😉  … and of course to everyone else out there… I just had to post kisses on this wonderful day… kisses for my sweetie… to the one who treats me like a queen… the one who always lets me have my way… well almost… (and sometimes it comes with a bit of a struggle… but hey… that’s part of the fun) but most of all… to the one that always puts me first!  Happy Valentine’s Day!!!

I thought I would have a bit of fun with these… they are modelled after my mom’s kisses (pusinky) that she often made for Christmas.  They were a staple because it was her way of using up all those egg whites that were left over from all the baking that required only yolks.

 

I decided to make them as a treat this year… for this day… because they are sweet… they are fun… and they are so easy… okay I know mine don’t look exactly like a perfect kissy kind of swirl… but they sure do taste good… they are a melt in your mouth, dreamy peppermint kiss!

…And…. what a fun way to give a Valentine’s Card!!!  Happy Valentine’s Day Everyone!

 

For these you will need three ingredients… egg whites and sugar…and a bit of peppermint extract… that’s it… I know many of you have made these with cream of tartar but I didn’t have any, I’ve never actually used it, and they turned out just fine… so… that’s three ingredients… and a few hours… they need to bake for a while.  And food coloring if you want to streak them.

Preheat the oven to 300 degrees ** You’ll turn it down to about 150 as soon as you put the kisses in the oven but start off at a higher temp.**  Put the egg whites in your mixer and let it go… mix on med/high until these form nice peaks, then add the sugar tablespoon by tablespoon into the mixer that you’ve turned down to medium speed until all the sugar is incorporated.  This is when you add the extract. The mixture should be nice and glossy and form stiff peaks (about 10 – 15 minutes)

Before placing the meringue into the piping bag use a paint brush to paint streaks of color on the inside… this will create the swirls.  Pipe them onto either a silpat or parchment and put them in the oven…

Turn the oven down to about 150 degrees and allow them to bake until they are just about crispy, approximately 1 1/2 to 2 hours.
