I had something for lunch today that my mother had very regularly when she was incubating me. In the Czech Republic most office buildings had cafeterias attached to them and the menu was full of home made healthy food, from scratch! My mother loved herring salad and had it almost daily. It has also always been one of my favorites, if you want to make it a bit healthier then just swap the sour cream for either fat free or low fat or plain yogurt (though with the yogurt the flavour will be a bit off) and my belief is that sometimes when you indulge you can indulge with something good.
This recipe isn’t hard and fast but the essence of it is:
- 1 Jar of Wine Marinated Herring – drained
- ½ Cup Mayonnaise
- 1 Can Peas and Carrots
- 1 Small Onion – sliced thin
Mix all ingredients together and let sit overnight. Eat with a nice piece of dark bread.
